Chaga Choc Chip Cookies - Recipe

In my days as heidi.flora plant based chef, I used to make these cookies for a Cookie Cult box I would sell every couple of months. People still ask me to make them now! Let's just say they are hauntingly good. SO.. I've decided to give the recipe away, for everyone to make at home - as I've discovered they are even better dipped in cold m*lk! It's a MUST try. Chaga Choc Chip Cookies  🍪

Prep time:  30 min

Makes: 10-12 cookies

Ingredients

120gm Almond Butter
105ml Maple Syrup
45ml Coconut Oil
1/2 tsp Vanilla Extract
50gm GF Flour
33gm Arrowroot Flour
75gm Almond Meal
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Vanilla Powder
100gm Chopped Chocolate
1/2 tsp Chaga Powder

The Steps

  • Preheat oven to 180 degrees fan forced
  • In separate mixing bowls combine all wet ingredients in one, and all dried ingredients in the other.

  • Mix wet into dry ingredients and combine thoroughly 

  • Roll into 50gm balls, place on lined baking tray and slightly press down

  • Bake for 14-16 mins

  • Once fresh out of the oven sprinkle with flaky sea salt

  • Keep refrigerated or frozen in a sealed container.
